Destination Wedding in Jamiaca: Which Sandals Resort is best?

So, after a few months of planning a wedding in the ‘States, my husband-to-be and I have opted for a destination wedding instead. We’re pretty set on Jamaica as our location and Sandals as our resort. I was hoping that past guests and/or employees could give me any information on which resort we should go with. We’d like to stay somewhere quiet, with lots of activities, beautiful beaches, and good food. My future mother-in-law is set on swimming with dolphins and I know Dolphins Cove is in Ocho Rios so there’s some appeal to stay there, but I want some honest opinions from real people. Also, how does the wedding process go? Are their wedding packages nice (esp. the basic package)? I’m going with my husband-to-be and our immediate families. Thanks in advance!!

By the way, I saw that the resorts are “couples only”. Would our families be able to stay there, too? They’re all adults.
